Oatmeal is an amazing food. It’s healthy, satisfying, and economical. You can use it in smoothies, cookies, breads, etc. I don’t really care for the taste of cooked oatmeal, but one of my favorite breakfasts is this recipe for baked oatmeal. Our whole family loves this yummy breakfast dish, and it can be made in a snap. Make sure to start it the night before!
Mix together 3 cups uncooked rolled oats and 1/4 cup yogurt, milk, or kefir. Let sit at room temperature overnight. The next morning, preheat your oven to 350 degrees.
Add to oatmeal mixture:
1/2 cup oil (we use melted coconut oil)
3/4 cup honey
2 teaspoons baking powder
2 eggs
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon vanilla
Spread into a greased 9 x 13 pan. Sprinkle with additional cinnamon and bake at 350 degrees for 25-35 minutes, until set and nicely browned. Serve warm with milk and fruit. One recipe serves about 6-8 people, depending on how hungry you are! Enjoy on one of these cold winter mornings!
Happy Tuesday! :)

February 15, 2013Thanks for posting Brookie! We might try this recipe! We make plain baked oatmeal, and top it with apple butter, but this one looks a little different, so it will be fun! =)

Have you ever made it ahead of time and then heated it up in the microwave or reheated it in the oven? I won’t eat a whole batch by myself, but I’m anxious to try it, it sounds delicious!!!!

February 18, 2013Hi Maria! Yes, this keeps very well in the fridge, and you can easily reheat it in the microwave. That’s what we do with leftovers. I hope you enjoy it! :)
